The Plant they come from is a small evergreen tree. Usually my relatives trim the trees so that they are only about three feet tall. When they are three years old, the tree are ready for the first picking.
Only the buds and the very young leaves are picked. Pickers carry baskets for the leaves as they walk along the rows. Picking is done several times a season. There are many kinds of tea. My relatives are busy all the year round.。

People paid more attention to and placed more stress on the pure flavor of tea and its inherent taste through which spiritual pursuit could be realized, solace to soul could be obtained and the pursuit for a supreme bourn that human being and nature had been integrated into one entity could be attained.

In a country with the history of five thousand years, the Chinese tea drinking habit dated back to the Tang Dynasty (618-907AD). It became a national tradition and led to development of a delicate tea drinking ritual. Over the centuries, poets and artists in China wrote many marvelous masterpieces, in appreciation of tea and Chinese people’s constant love of tea drinking .One of the best-known writers is Lu Yu, who was regarded as the “Tea Sage ” for he composed the first book on tea. In his classic book, he detailed his studies of tea, such as the origin of tea, tea tools, tea picking, tea cooking, tea ceremony and well-known areas where tea was grown. And the valuable knowledge he recorded has laid foundation for modern tea culture development.
Based on ways in which tea leaves are processed, there are five distinct types of tea. They are as follow: the green tea, the black tea, the Wulong tea, the compressed tea and the scented tea. Among them, may foreigners are familiar with the green tea. The Longjing tea, of the green type, has a reputation.

Oolong tea leaves are picked 3 to 4 times a year
It is made from more mature leaves consisting of one bud with 3 or 4 leaves.
2 Withering under the sunbeam(日光)
Freshly picked leaves are left to cool either indoors or outdoors to remove moisture(水分)
The leaves may alternate(交替变化) between indoor and outdoor, as too much sun can cause over-heating.
3 manipulating
This is perhaps the most critical part (要害部位) of the making process.
The Wuyi Rock tea, it take up to 10 hours.
The process ends when leaf edges start to redden and aroma substances form.
4 pan firing
At the precise time when aroma(芳香) substances have started to form, bruised(青肿) leaves are pan-fried at high heat to kill the enzymes(酶) and stop the oxidation process.
This process is called fixation and lasts only a short time.
5:Rolling and Shaping
Apply pressure to roll fixated leaves into the desired shape.
This is an important stage. The tea-maker decides how much "fire" goes into the tea. 
The additional slow-baking improves the color and aroma of the tea liquor.
7:Sorting, Cooling and Packaging
During these final stages, leaves are sorted to remove sub standard leaves and twigs(细枝).
It may be re-heated later, then cooled and packaged.

Chinese also have their own afternoon tea.And the form is similar to British afternoon tea.But the purposes between them are different.In Britain,afternoon tea is a fixed and important part in daily life.It only happens in family members.It also be absolutely personal.They would try their best to avoid the pressures of life and work when they have afternoon tea.In their minds,having afternoon tea is a way of relaxing themselves.However,when Chinese people have what is called afternoon tea,they think that it is more about social life but relaxation.
