DREUX ELLIS - EXECUTIVE CHEFAfter working in fine dining restaurants in both Boston and San Francisco, Dreux Ellis spent 8 years in Venice, Italy where he undertook a traditional European apprenticeship path, working in a number of five star hotels and training under two Michelen-starred chefs. He was the founding chef of Le Spighe, the first vegetarian gastronomy restaurant in Venice, which enjoyed great success working with the Venice Biennale and the International Film Festival. Dreux returned to San Francisco in 2008 to deepen his exploration of plant-based cuisine, managing the Central Kitchen for Cafe Gratitude. In April 2012, Dreux came to Venice, California as Executive Chef of Cafe Gratitude in Southern California bringing his health-based, flavor driven cuisine to a wider audience.

A CLEANSE PROGRAM BY CAF? GRATITUDE
Eating clean is easy.
To cleanse does not mean to diet. It means to detox, refine, and rejuvenate. However, the word “cleanse” has become intimidating and scary, because it now associates its meaning with deprivation and restriction.
With this misinterpretation in mind, we chose to develop our cleanse concept based on this simple truth: Eating clean is easy and furthermore, is a tangible and enjoyable lifestyle that promotes one’s vitality, health and well-being. It restores both the mind and body not only through what we consume, but through love, acceptance, gratitude, worth, creation, abundance and generosity.

A daily menu of teas, juices, elixirs, raw salads and smoothies for those interested in returning to an all organic diet, those who want to restore their health, or for those who are curious about how it feels to live a plant-based lifestyle.

A curated detox plan made up of cold-pressed juice blends and supplements for experienced cleansers. Juices are packaged in bottles, so you can carry them with you throughout your day. We’ve formulated both our Juice Plan to include specialized
supplements to further support your cleansing experience. Each supplement is both 100% organic and vegan, and aid the body in digestion, immune support, metal extraction and clarity of mind.
Café Gratitude offers 100% organic, plant-based cuisine and yet we cannot guarantee that guests with food or beverage allergies may not be exposed through cross contamination. If you have a food or beverage allergy (particularly to nuts or seeds) we therefore recommend that you not dine with us. As such, please understand that Café Gratitude cannot be responsible for any injury, loss or damage claimed by any guest with a food or beverage allergy who consumes our food or beverages, regardless of the circumstances.
WHY SOIL MATTERS:
REGENERATIVE AGRICULTURE
After 8 years of living in San Francisco to birth Cafe Gratitude,Terces and I decided we'd try our hand at farming. We were led to 21 acres of fertile soil in Pleasants Valley, Ca. near Vacaville. We called our new mission, Be Love Farm. Our intention has been to create a place where our community practices stewardship of both our earth and our hearts. With a fair dose of beginners mind we set off to grow nutrient dense fruits and vegetables for our cafes.
In 2009, Shankar Venkataramen, an engineer with more enthusiasm for vegetables then software showed up at our gate ready for a new chapter in his life. I suggested he buy the prune orchard down the road and we'd could farm together.
Seven days later it was done.
Be Love Farm and Hillview Organics is an ongoing experiment in regenerative agriculture or carbon farming. This means using agriculture, partnering with the plant kingdom, to drawdown the excess carbon in the
atmosphere and capture it in soil humus in order to stabilize the climate and reverse ocean acidification and desertification. We have a motto,
“Annuals, under the protection of trees, with the redemption of grasses". This means that we sow our annuals ( plants that grow only one season) amongst trees ( for their soil stabilizing, cooling, evaporation cutting,
nutrient dredging powers) and rotate our annuals with perennial grasses ( for their soil building, carbon sequestering, livestock feeding , water holding powers). We keep the earth as covered and undisturbed as possible, continually looking for ways to shift to more perennial production systems. Shankar's passion is for vegetables, at Be Love we focus more on trees, together we produce an A (Asiago) to Z (Zinfandel) cornucopia of foods including 50 varieties of vegetables, fruits, nut, olives, eggs, honey, etc. We delivery twice a week to the Los Angeles cafes and once a month the cafes send us 20+ employees to have a nurturing respite at Be Love farm.
